Salad Ideas

It's a pretty common thought that salads are a great meal option when you are trying to eat healthier (as long as you aren't loading them up with cheese, creamy dressings, or fatty fried crunchies!) But a big ol bowl of lettuce can get monotonous if you start to do it for a while.  So I just wanted to share some of my recent salads with you all in case you needed some fresh ideas!  Disclaimer:  I do not like salad dressing, so none of them have any!  

Lettuce mix, cucumber, sweet peppers, grapes and left over baked chicken strips.

Lettuce mix, sweet peppers, cucumber, strawberries, shredded mozzarella and Tyson Grilled and Ready Chicken Breast.

Lettuce mix, grapes, carrot chips, shredded cheddar, Tyson Grilled and Ready Steak and leftover roasted squash. 

Lettuce mix, sweet peppers, cucumber, kiwi and Tyson Grilled and Ready Chicken Breast.
Any other inventive salad ideas out there?  I'm always looking for new ways to mix it up!

Healthier Cupcake Trick

So of course the boxed cake mixes come with directions on them, those directions telling you to load up this already sugary mix with fat and cholesterol!  No thank you!  Did you know there are a variety of things you can mix in and still have cake-like goodness come out?  I've tried a few of the ways but right now my favorite has been to mix in diet soda because it's so easy.  One can of soda + one box of mix, stir and bake! And you can mix and match flavors to make all kinds of fun things!  What I like about it as well is that it makes 12 cupcakes instead of 24.  I almost never have a need for 24 cupcakes, so the 12 works much better for me, but it is something to keep in mind if you need to make a lot of cupcakes for something.

My second trick is more of a timesaver - the new Cool Whip Frosting.  So much better for you than the canned stuff in the cake mix aisle.  This stuff can be found in the freezer and I actually think is more tasty.  You just have to thaw it before you want to use.  It's fluffy and light and yummy!  You don't even need an entire container to frost these cupcakes generously!

This is all you need for the cupcake part!
Put together in large bowl.
Stir it up!
Into the oven per box baking instructions!
This is how they look when done, they look more like muffins but they still taste like cupcakes!

Frost and decorate and fool all your friends! :)

I also tried this with Funfetti and Fresca with vanilla frosting, delicious!

Change of Pace

I've decided to change the purpose of this blog a little bit. Yes I'm still going to review products and recipes etc but I'm also going to share with you my struggles and triumphs. I've been tracking my calories on for quite a while now and what it has taught me is that we aren't alone in this. We all have our own personal struggles but we also have a lot of the same obstacles to overcome.

So here we go, time to get a little more personal.  I lost 20 pounds last year and then kind of hit a major plateau for most of 2013 so far. Trying to mix it up and try new things and see what happens.  I have about 35 more pounds to lose to be at an "ideal weight" for my height but for me its really about being healthy and making changes that will last me a lifetime. Hopefully some of what I've gone through will help anyone out there reading as well.

Pizza Hut Pucks

So the new pizza hut sliders seemed like a great idea in theory... so much easier to control yourself when you have your own individual slider to call your own!  But actually the stats on these are outrageous and one slider isn't even worth it.  They are fun because you can pick three different topping combos for the little guys, but that's where the perks stop.  The dough to topping ratio is just awful and you feel like you are just eating a mouthful of bread.  Chewy bread at that.  If you are going to splurge on pizza hut, stick with the classic pizza options (thin crust is always best!) and fruits/veggies for the topping!

So. not. worth it.
Also, seems like there's more space in the box for the same amount of money and calories...  such a disappointment over all, these sounded so fun in theory!

Easiest Berry Cobbler, Ever.

So this is one of the many fun things I've discovered on Pinterest.  It sounded easy enough so I figured I'd give it a try.  You need cake mix, frozen fruit, and a can of diet soda.  I'm assuming there are plenty of delicious combinations you could put together for this easy dessert fix!  I picked white cake, frozen mixed berries, and Fresca!
What you need.
It's so easy, you just layer all three things in a large deep cake pan (mine's a disposable one since I was making this to take into work)

Lots of frozen berries!

Cake mix next!

Pour soda on top!
 Then you just put it into the oven with NO MIXING.  Bake it like you would anything else and it's done when it's brown on top.

It's done! Enjoy :)

This was delicious!  There was a little bit of extra moisture on the bottom from all the juice but I think baking it a few minutes longer might have helped.  The stats are completely reasonable and this could not have been easier to make.  I can't wait to try it with other things, I'm thinking chocolate cake mix, frozen cherries, and diet Coke!  Other ideas?

Snack Find

Dole Banana Dippers

Just a quickie update here.  Found these in the freezer aisle and am loving them!  You get 100 calories perfectly portioned out to give you not only a chocolate fix, but also a dose of fruit!  Four medallions come in a pack and I believe four packs come in a box.  Definitely a great sweet tooth buster!

Has anyone else found these?  I'm hoping they don't vanish right back off the shelves!
